Drops
A Kitchen commits to cooking a set amount, once. You tell them you want some before the cutoff, and they cook to the number.
A commitment is not a purchase. Nothing is charged and no portion is held. When a Drop reaches its target the Kitchen publishes a normal listing, and you check out through the usual cart with the confirmed price.

Drops open when a Kitchen decides to cook something in a limited run — a Sunday oxtail, a weekend bake list, a tray of something that takes all day. None are open at the moment.
